Officers said the car, which was travelling towards Barnstaple, skidded on black ice before careering through a hedge and overturning into a field.
An ambulance was called to the scene but the driver miraculously escaped with only minor injuries.
Paramedics checked the driver over at the scene but said they did not require hospital treatment.
Highways crews spent around two and a half hours recovering the vehicle.
At around the same time, police said a Renault Clio skidded on ice on the same stretch road and mounted a bank, taking out a fence in the process, before driving off.
The road was cleared by 9.20am, although ice remains a problem in the area.
