Latta, from Braunton, North Devon, was arrested after an alleged robbery at the Knowle Garage in the town in which two masked men were seen on CCTV brandishing a cleaver and a kitchen knife.
Grandmother Mrs Mian was shown on the film fighting them off during the raid on the evening of Saturday November 10 in which around £50 was taken from the till.
Latta, of no fixed address, is charged with robbery.
He denied other unrelated charges when he appeared at Exeter Crown Court on Friday.
He pleaded not guilty to theft of a watch, clothing, jewellery and an X Box from Reuben Densham in October last year and assaulting Mr Densham on the same day.
He also denies breaching a restraining order imposed by Barnstaple County Court on October 9, 2012, by contacting Tracy Phillips on November 16.
The other cases were adjourned for a separate trial and Latta was remanded in custody by Judge Erik Salomonsen until his next appearance on February 25.
