WITH all the recent talk and speculation of what is actually in our food, one restaurant on Exmoor is showcasing its commitment to local and regional produce with an Exmoor Food Safari.

The safari for foodie fans explores the journey from park to plate at The Culbone, Exmoor National Park's highest inn. Overlooking Lorna Doone Valley, its location provides a bountiful natural larder, while the team's commitment to local produce has already won them awards.

The Exmoor Food Safari is not just about good food, but about seeing exactly where and how the local produce is sourced and how to prepare and cook it to create delicious meals.

Held over a weekend, day one features a guided trip with a local fisherman to the varied natural waterways of Exmoor National Park and a chance to catch your own fish. Returning to The Culbone, head chef Jack Scarterfield will hold a masterclass in preparing and cooking a range of different local fish and then participants will cook and eat their own catch.

Day two begins with a visit to the nearby scenic National Trust Holnicote Estate to meet farmer Simon David of Big Red Cow and his Ruby Red Devon cattle. Farming here for generations, Simon explains the field to fork process, and will show the group around his stunning hilltop farm. This will be followed by a masterclass in cooking and preparing beef from Jack in The Culbone's new cookery school kitchen.

Arriving Friday evening and departing Sunday afternoon guests pay £430, which includes accommodation, meals and the activities above.

Exmoor Food Safaris are on February 22 to 24, March 29 to 31, April 26 to 28. Details: 01643 862259 or visit www.the culbone.com/food-safaris
